It's "Meet the Bride Monday" and we are overjoyed to introduce our sweet bride, Jaritza Encarnacion! She will be marrying her best friend, Ramiro, on September 22 of this year. There is nothing better than seeing two people absolutely and completely giddy to get married. It brings out the hopeless romantic side of us, and these two do just that. Couples like Jartiza and Ramiro, who truly enjoy each other's presence, are what we live for in this industry.
Jaritza so kindly answered a few questions about her wedding. We have also shared their gorgeous engagement photos below. Enjoy this beautiful bride, and her sweet fiancé!

-Tell us a little bit about you and your fiancé. How did you meet? What are some of your favorite things to do together?
Ramiro and I met online, though we can't decide whether it was through Instagram or Tinder. Our first date was in November of 2015 (at Pappasito's Cantina) and the rest is history! What I love most about Ramiro (besides how handsome he is!) is his calm, patient aura. He is very kind, loving, and always has my best interest in mind. He also makes me laugh so much-never a dull moment with us! We're both foodies; we go out to eat very often and love trying new restaurants! We also play Disc Golf together and love visiting the dog park with our Belgian Malinois, Osito. We are both family oriented and visit both our families regularly; we are blessed to only live 4 minutes from my parents and 15 from his!
-Why did you choose Chapel Creek Ranch as your wedding venue?
Four words: We fell in love! Ramiro and I visited the venue and turned to each with the same thought: THIS IS IT. What's interesting is that I visited Chapel Creek Ranch during the grand opening (I wasn't engaged yet), never thinking I would be getting MARRIED there! I also said I would never get married in a barn, but I have to eat my words now! The main barn is simply stunning on the inside. The chandeliers and grand staircase sealed the deal for me-I couldn't stop staring!
-What style are you going for for your wedding? What is your inspiration?
Everyone keeps asking what my 'theme' is and I really don't have one. Everything for the wedding are just things that Ramiro and I like. I have incorporated my love of theatre, bundt cakes, and fun colors, just to name a few. If I had to describe my wedding style, I would say simplicity and romantic lighting. I will have lanterns and candles for soft lighting. I want all the decorations I have to be meaningful, so I have picked each one carefully.
-If you could give one or two pieces of advice to brides in the middle of planning their wedding, what would it be?
Tidbit #1: Get organized. It sounds easy, but once you get organized, it really will help you feel less overwhelmed. Whatever you prefer (journal, planner, binder, etc), just keep up with it. I personally have an Excel spreadsheet which has been my saving grace. Write down questions, concerns, compare vendors, keep track of expenses, bridal show dates, etc. You won't regret taking the time to get organized!
Tidbit #2: Make a decision and stick with it. Then, get off Pinterest! What I mean by that: If you find your dream dress, or the perfect table setting, stop looking! There's always going to be something 'better' out there, and you'll just end up with buyer's remorse, or second guessing your choices. Use Pinterest/the internet for ideas, but once you decide on something, stop your search! Your dress is beautiful, that cake is delicious-trust your instinct! You got this :)
-If you had to choose one part of CCR that you love the most, what would it be?
The never-ending beauty! There are millions of photo ops, from Horseshoe Point, to the Chapel, the pond, the bridge, the swing, the old farm equipment, the main barn itself...there's SO much to take in! When we were taking our engagement pictures, it was so easy to find beautiful spots to take photos!I can't wait for my guests to be blown away by the insane BEAUTY of Chapel Creek Ranch!
